If you’ve tried our Basic Granola recipe you know that – not only is it super simple, but – it’s a tasty bit of crunch on its own or paired with a tangy yogurt. Make it fancier with this Apple Pie Parfait! It’s pretty simple: when butter and sugar get frisky, the results are beautiful.
4 Tbl salted butter
1 red apple, chopped
1/4 c brown sugar
pinch of ground cinnamon, nutmeg, and ginger
1 c greek yogurt
handful of Basic Granola
In a heavy sauce pan, melt butter over medium heat. Only slight brown the butter while constantly stirring. Add in chopped apple and sauté until the apples have turned golden. Add brown sugar and spices.
Raise heat to med-hi and sauté. Continue stirring for 3-4 minutes or until the sugary mixture begins to bubble around the edges. Turn off heat. Add in a handful of Basic Granola and stir until all the oats are well covered in sugary goodness.
Let cool for 5 minutes. Divide greek yogurt among two dishes and top with the apple mixture. Who says breakfast can’t taste like dessert?
