Breakfast + pizza hooked up this week. They flirted, they connected, and they created something hot n' steamy: The Brizza. While we used the set ingredients below, it’s quite fun to mix it up with an array of whatever your fridge yields. Go for it!
2 tortilla shells
handful of fresh spinach
In a medium sized pan, heat two round of olive oil. Place a tortilla in the pan. Fry over medium-high heat for 1-2 minutes. Flip and repeat. Repeat with the second tortilla. Place tortillas to the side for later.
In the same pan over medium heat, place the handful of fresh spinach. Sauté for 2 minutes and then evenly divide in two portions. Crack each egg over top the two portions of spinach. Sprinkle with salt + pepper and fry to your liking
Top the tortillas with prosciutto and place back in a the pan. Top with the spinach & egg.
Sprinkle with cheese and cover the pan. Lower the heat to a simmer and let the cheese gently melt.
Serve immediately to start the day of right!
