brussel + apple skewers

Brussels Sprout meet Red Apple. Get hot and roasted together. Good things will happen. This savory and light nosh is great as an appetizer or as a side to your dinner. 


make 6-8 skewers

1-2 doz brussels sprouts, halved

1 large red apple, cored and chopped into chunks

olive oil


s & p

parmesan cheese, shredded, optional


Assemble your cut sprouts and apples on skewers. Line them up like little soldiers on a baking sheet. Generously drizzle with olive oil, a squeeze of lemon, and s+p to taste. Roast in a preheated oven at 400. Rotate the skewers once after 10 minutes of baking. Bake for the remaining 10-12 minutes. Remove baking sheet, sprinkle with parmesan cheese {if desired}, and place back in over for 2 more minutes. Let the skewers cool for 10 minutes before chowing down.


***Also try its spruced up version in which you add bacon! Toss the brussels sprouts and apple chucks with olive oil, s+p, and a squeeze of lemon in a big mixing bowl. Pour contents onto a roasting pan. A top sprouts and apples, add pieces of uncooked bacon, sprinkle with brown sugar, and bake at 400 for 10 minutes. Remove roasting pan, give contents a good stir and flip, and bake for another 12-15 minutes.
