You know a snack is worthy of staying in your recipe catalog when it satisfies both children and adults. Even better is when it’s simple and quick. All requirements are met with this Chunky Monkey Quesadilla. We can’t wait to try it on the grill this summer. Yum yum yum!
2 whole wheat soft tortillas
1 banana, sliced
1/4 c heavy cream
4 oz chocolate, ground
1/2 tsp vanilla
On one tortilla shell spread your desired amount of peanut butter. Top with banana slices.
Spread the Nutella on your second tortilla shell and place on top of the peanut butter-banana tortilla to form a sandwich.
Heat a tab of butter in a large skillet over medium-hi heat. Place quesadilla in pan and cover. Let it cook for about 2 minutes before flipping over. Cook the other side for another 2 minutes.
Remove from heat and let the quesadilla sit for a minute before cutting.
If serving with sauce, ground your chocolate in a food processor until fine. Transfer to a heat resistant bowl.
Heat heavy cream in a small pot over medium heat just until the edges begin to bubble. Pour over chocolate and cover for 3-5 minutes. Remove cover and add vanilla. Whisk until the chocolate and cream become a smooth sauce.
Serve immediately… or keep it all for yourself!
