creamy lemon bucatini

If your days are busy and your meals are lacking some excitement, fall in love with this delicious one-pot pasta dinner. The ingredients are simple and inexpensive. A perfect meal awaits you in under 20 minutes. Bon appétit! 

 

serves 2

2 qts water

8-10 oz bucatini pasta

1 TBL lemon juice

1/3 c heavy cream

handful basil, fresh & chopped

handful grape tomatoes, diced

1 tsp lemon zest

1/2 c pasta water

1/4 c pecorino cheese, shredded

olive oil

s+p

red pepper flakes, crushed

egg yolks, optional

 

Over high heat, bring the water to a boil. Add a few cranks of salt and a couple drizzles of olive oil.  Throw in your bucatini pasta and gentle push down until fully submerged in water. Lower heat to medium and let the pasta cook for 8-10 minutes, just until it’s soft but not mushy. 

Reserve 1/2 cup of pasta water. Drain pasta. 

Add lemon and cream.

Add in half of your basil, all the tomatoes, lemon zest, pasta water, pecorino, and s+p. Mix well & place on low heat for 2 minutes. 

Serve immediately, sprinkling with red pepper flakes, extra basil, and an egg yolk if desired… which is highly recommended!
