spring dip

It's certainly feeling like Spring! The sun is becoming warmer, the days are becoming longer, and the anxiety of swimsuit season is quickly approaching.

Just. Lovely.

Naturally, I'm looking for ways to keep my eating – and the inevitable snacking– on the lighter side. Never fear! Gooey carbs and melty schmelty butter-loaded foods aren't banned completely, but they are kept to a minimum these days. 

One of my all time favorite snacks is the incredible cheeseball my mom makes every time the family gets together. It's a mixture of soft cheeses, whipped together, formed into a ball, covered with crushed walnuts, and served up with crackers. It's impossible to practice self control with mom's cheeseball. 

However, cheeseball just isn't going to float these days. So, I'm trying my hand at a faux version: Enter peas, cucumbers, sprouts, and a load of flavor. Mix it up and serve it in a bowl or get a little fancy and shape it into a beautiful sphere to wow a crowd. 

Either way, it's a pleaser. For sure.

 

serves 6

1 lb frozen peas, lightly steamed

1/2 c cilantro, chopped

1Tbl mint, minced

1Tbl lemon zest

1 Tbl lemon juice

2 tsp cumin

1 tsp salt

1 Tbl red pepper flakes

2-3 rounds of olive oil drizzle

1 1/2 c cucumber, finely chopped

1/3 c ricotta

1 c microgreens, chopped

 

Add the steamed peas, herbs, lemon, spices, and oil into a food processor. Pulse until smooth. 

Transfer pea purée to a large bowl. Add the cucumber and mix. Add ricotta and thoroughly combine. 

If you want to serve the dip in a bowl, first chill in the fridge for 30 mins. If you wish to form it into a sphere, place in the freezer for an hour and continue to the next step. 

Prepare a flat surface with 2 pieces of plastic wrap, one horizontally and one vertically. Turn the mixture out on the middle cross section of the wrap. Form into a ball as best as possible. It will still be fairly mushy. Pull all four sides of the wrap together to resemble a ball and tie off with string.

Place back in the freezer for 5 hours or overnight. 

Unwrap the dip. Take the chopped microgreens and firmly press around the surface of the sphere.

Serve immediately or again saran wrap and save for later. Best with hearty crackers or chips. Heck, just grab a spoon and go to town!
