sweet potato nachos

Nachos have always been a favorite of mine. When I was younger we would have nachos most Sunday nights. It was our family tradition to setup up tv trays in the living, stuff our faces, and watch Michael Jordan and the Bulls take on the Bad Boys of Detroit, Larry Bird and the Celtics, and all those giants of basketball. Even to this day I cannot devour a plate of cheesy, salty, spicy nachos without thinking back on the way #23 would soar through the air, tongue out, wingspan of an albatross, letting the ball guide him all the way to the hoop.

These Sweet Potato Nachos definitely kick it up a notch. The subtle sugary undertones of the potato create a light complexity that will dance on your palette along side the tangy zip of the blue cheese sauce. serves 4

1 large yam, washed and thinly sliced

1 Tbl vegetable oil

s + p

1 Tbl butter

1 Tbl flour

1/2 c warm milk

4 oz blue cheese, crumbled

1/3 c green onions, chopped

1 Tbl jalapeño pepper, diced

1/2 c bacon, cooked and crumbled


Preheat oven to 400º. Slice the yam evenly and as thin as possible. Toss in a bowl with vegetable oil. 

Place sliced yams on a cooling rack that fits into a baking sheet. Be sure no slices are over lapping or they will not crisp up properly. Bake for 10-15 minutes, but watch carefully. (If certain slices seem to be browning faster than others, removed the cooked chips and allow the others to continue baking.) Turn oven off and keep chips inside for another 20 minutes.

Begin making the blue cheese sauce. In a small saucepan or pot, over medium heat, melt butter. Whisk in flour and cook for about 1 minute. Turn heat off and slowly pour in warmed milk while constantly whisking. Make sure there are not lumps. Bring to a simmer and cook for 2 minutes, or until mixture thickens. Add the crumbled blue cheese and whisk until fully incorporated. Add your desired s+p.

Create you nachos by first building one layer of chips, sprinkling with onions, jalapeño, and bacon. Lightly drizzle with cheese sauce. Repeat the building process until your desired quantity or until you’ve used up all ingredients. 

Change into your comfiest sweatpants, find your biggest blanket, grab your sweetheart, and cuddle up on the couch with this plate of goodness. Nachos that nourish heart and soul!
