who hash

Here’s a bit of a throwback to younger years of reading and re-reading all those silly and thoughtful books of Dr Seuss. Why did the Grinch have to steal the Who Hash? He already had the Roast Beast and all the Christmas gifts? Poor Cindy Lou Who and all the folks of Whoville.

It must have been that the Grinch was under the impression Whisk + Brush had made the Who Hash. Unfortunately, we weren’t contacted by Dr Seuss for that recipe. Chances are, though, he had thought about it. So now, finally, we’re getting around to creating a little Who Hash. Enough for the Grinch, Cindy Lou Who, and Dr Seuss.

serves 4

6-8 red potatoes, medium

1 c ham, precooked + diced

1 onion, diced

1/2 c green + yellow peppers, diced

1 clove garlic, minced

1 Tbl fresh rosemary, chopped

olive oil

Wash and scrub your potatoes. Cut them into quarters and then pulse in a food processor. If the potatoes seem quite moist, squeeze out some of their water with a paper towel.

In a large sauce pan drizzle two circles of olive oil and warm over med-hi heat. Add your shredded potatoes and onion. Sauté for 5 minutes or until the onions start to become transparent.

Add in peppers and ham. Sauté again until everything is one big mess. About 5 mins.

Lastly, add in the minced garlic, rosemary, and a crank of salt + pepper. Sauté for 3 more minutes over medium heat.

NOTE: To really get a good golden crisp on the hash, it is highly recommended to put in oven on broil for 20 minutes. Serve immediately. Pairs nicely with a fried Who Egg.
