Ramps are one of those vegetables in which less is more. We’re not suggesting you eat these ramps raw, but we do recommend fussing with them as little as possible. Let them sing all on their own without much labor on your part. Keep their companion ingredients simple, fresh, and mild so their garlicky kick can shine through.
This Ramped Up Pizza can be varied to fit your particular pizza hankering. You can use regular pizza dough, soft tortilla shells, or – like we did here – try it with naan flatbread. The toppings should be light. While we LOVE (and I mean LOOOOOVE!) cheese, take it easy this time around. Let the ingredients stay balanced with one another.
2 naan flatbread
2-3 toppings of your choice, we used shitake mushrooms and golden tomatoes
3-4 ramps, cleaned roughly sectioned, discard roots
2 Tbl olive oil
1 small handful of grated hard, aged cheese, like gouda or pecorino
Preheat oven to 350º.
Drizzle half of your olive oil over the naan. Use the rest to coat your toppings. Arrange toppings on the naan so they are evenly distributed and each bite will have a combination of your fixings.
Sprinkle with grated cheese.
Bake for 12-15 minutes or until the cheese has melted and crisped just a bit. Consume like the pizza monster you secretly are!
